Not Bad for Homemade

Afternoon Everyone – today has been much the same. Work, productivity and more work! :D Despite being tempted to buy lunch everyday, I’m really making a conscious effort to save up for the holiday season so I brought like a good girl. I threw a Morningstar Farms gardenburger between two slices of whole wheat bread with hummus, cucumbers, spinach and lettuce (veggie overload).  I paired it with an apple and some soy crisps and called it a lunch – not bad for homemade!   

Oh – and since everyone keeps asking.  I make my baked tofu with Extra Firm tofu, I cut it in half, then each half in thirds and lay them out on paper towels to absorb some of the moisture.  Then I spray the 6 pieces with cooking spray and salt (both sides) and put it in the oven on 425 degrees.  I do about 15-20 minutes each side (or until lightly browned and crisp) and voila!  It’s delicious and incredibly easy :D
