There’s really just nothing like a good workout.

I made it to school and got to use the gym to do a little over 4.5 miles on the elliptical.

I absolutely love the gym at Winthrop.  It’s brand new, two stories, has a pool, a rock-climbing wall and tons of studio rooms for classes.  Plus it has a ton of windows so it’s nice and bright!  It’s definitely something they got very right.

In other news, my appetite still seems to be missing.  Let me know if you find it anywhere, I’d love to get it back.  I may just be getting a little sick – there’s definitely something going around school.  A girl actually left one of my classes yesterday to vomit…then came back to class.  So….there’s that.

Either way, I didn’t notice any hunger until around 5:30 (may also be because of my later lunch) at which point I decided I might as well just make dinner.

I had some veggie crumbles in the fridge and some avocados that needed to be used up so I threw the veggie grounds in a pan with a few spices, mashed up the avocado and we had tacos with guac!

Into the pan with the veggie crumbles I put:

  • 2 minced garlic cloves
  • 1 tablespoon of hot mexican chili powder
  • 1/4 teaspoon of crushed red pepper flakes
  • 1/4 teaspoon of dried oregano
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of ground chipotle 
  • 1 1/2 teaspoons of cumin
  • 1 teaspoon of salt
  • 1 teaspoon of ground black pepper

It worked out really well!

I put out all the fixin’s (0% CHO, salsa, homemade guacamole, warmed tortillas and blue corn chips)…

and we assembled as we went!

I had two wheat tortillas topped with some mixed greens, veggie crumbles, salsa, 0% CHO and homemade guacamole

A perfect end to a good day!

Off to watch Homeland…soooooo good!  Did you know it’s mostly shot in Charlotte?  It’s so cool to see the city in the background of so many scenes!

    Why did the girl come BACK to class?! That’s so gross… why do people think it’s okay to infect everyone around them? (I have a vomit phobia, can you tell?)

        I agree! If you throw up, stay away! My appetite was crazy yesterday. I don’t want to get sick, but I kind of wish mine would go away!

      I JUST started so am only on season 1 but from the way it’s been going I can tell that I’m going to be completely sucked in by every episode!

    Oh my god- that girl is so rude. She should know- you vomit, you don’t get to come back. haha, I sound so selfish I’m sorry. I HATE vomit, like it’s a phobia for me. One kid at the school I was teaching at (for prac) vomited and I did everything in my power to get her home and very far away from me. Terrible Teacher right here 😛

    Fight it!!! I hate that feeling of knowing you are surrounded by germs and there is no escape! I hope you feel better soon.

    I haven’t seen Homeland yet, but I really want to. That’s on my list to watch next. We don’t really watch tv when it’s actually on and normally end up waiting until it’s on Netflix or DVD. That one is definitely on the list though!

      And Homeland is definitely worth watching….soooo good! We’re the same way with TV – I definitely prefer to be able to watch it back to back to back without commercials and waiting 🙂
