Quick and easy dinner tonight shoved down my face after a 20 minute yoga session and before my GRE class!

A big bowl of salad.

Into the bowl went:

  • Mixed greens
  • Avocado
  • Baby carrots
  • Baked Tofu

Annie’s Balsamic Vinaigrette on the side:

Whole wheat pita bread for dipping:

So good.

Exhausted so into bed I go!

    Hey Cait,

    Good luck on GRE prep!

    By the way have you ever tried vegan overnight oats? I’d love to see you do a post if you try them. I’m interested in trying it myself as greek yogurt just isn’t sitting well with me 🙁 Sad because I love greek yogurt and I’m not a fan of soy or coconut yogurts otherwise I’d substitute.

      I have! You can find them here: https://caitsplate.com/?s=vegan+overnight+oats But I’ve mostly relied on soy and coconut yogurts so it might not help too much 🙁 I would suggest just experimenting with swapping out different yogurts you find appealing until you get one you like! Good luck!

    you’re gonna do so great on the GRE’s with all the prep you’ve been doing!! And that is my kind of salad, I love tofu and avocado!
