If you’ve been with me for a while, you know I love adding fruit to my salads. They add such a nice hint of sweetness which pair so well with the other earthy, savory flavors.
I especially love fruit in salads when they’re paired with cheese. The salt from the cheese makes for the best sweet / salty flavor combo alongside the fruit.
This dish also happens to be nice since it helped utilize some of the cans of beans I currently have stocked up in my pantry!
I love adding beans to salad. They’re such an easy protein alternative and I almost always have a can sitting in my pantry that I can rely on.
There are no real rules to this salad. You can toss in whatever you want. If you prefer spring mix or baby kale to baby spinach, go for it. If you don’t like onions, you can omit them. It would also be great with chickpeas or chicken (or bacon!).
I topped mine with olive oil and balsamic glaze but you could do olive oil and red wine or balsamic vinegar, a balsamic vinaigrette or even a lemon vinaigrette!
However you choose to serve it, I hope it brings a little springtime to your table!

Ingredients
- 2 large handfuls baby spinach
- 5–7 whole strawberries, washed, hulled and sliced
- 1/3 – 1/2 cup white beans (I used cannellini but navy would also work!)
- 1–2 tablespoons diced red onion
- 1/4 cup crumbled feta cheese
- 2–3 tablespoons walnuts
- Freshly ground black pepper
- Dressing of choice (I used olive oil and balsamic glaze)
Instructions
- Combine all ingredients into a dish, toss with dressing and enjoy!
Notes
- If packing for lunch, omit the dressing and pack separately, adding just before you’re ready to eat.
