Apple Crisp Parfait

Good morning!  Happy Monday!

I hope everyone enjoyed their weekends.  We definitely enjoyed ours!

As Sunday morning’s post may have indicated, I have a plethora of apples and not much other fruit in the house so I decided to try something new for today:

An apple crisp parfait!

For whatever reason I always tend to think of berries as the best parfait pairing.  I’ve never really even considered apples and pears…I have no idea why.  But I’m glad I tried it out today because it turns out it’s pretty darn delicious.

Into the glass I layered:

  • 1/2 cup plain non-fat greek yogurt + 1 tbsp. chia seeds
  • 1 diced Jazz apple
  • Spoonful of melted peanut butter
  • Love Grown Simply Oats granola

Now Clara and I are curled up on the couch watching the latest episode of Mad Men.

    I used to put pears in my breakfast bowls all the time but stopped for some reason. I have no idea why though because it was delicious!
