Ingredients

- 1 medium zucchini, washed
- 1 yellow bell pepper, washed
- 1 red bell pepper
- 1 orange bell pepper
- 1/4 small onion, diced small
- 1–2 cloves garlic, minced
- 16 oz. ground turkey breast
- Olive oil
- Salt & pepper to taste
- 1 jar favorite marinara sauce, or homemade marinara sauce
- Freshly shaved parmesan cheese
Instructions
- Spiralize zucchini and peppers, sprinkle with salt and set aside
- Meanwhile, heat olive oil in a large non-stick sauté pan with high sides over medium low heat
- While olive oil heats, take spiralized veggies and press in a cheesecloth or paper towels to ring out excess water, then set aside once more
- Add minced garlic and sauté for 1 minute, then add diced onion cooking until fragrant (about 1-2 minutes).
- Add spiralized veggies to the pan tossing to cook until they are tender but not mushy (about 2-3 minutes)
- Remove from pan and place in a bowl to the side
- Drizzle a bit more olive oil into the same pan (no need to wipe it out) and add turkey, salt and pepper to taste and brown all the way through (about 15 minutes)
- Add jar of marinara over turkey and stir until all the turkey is covered in the sauce
- Add spiralized veggies and toss to combine
- Scoop mixture into a bowl, top with parmesan cheese and serve over favorite whole grain or with a whole grain roll
Notes
- Feel free to toss this with whole grain spaghetti or angel hair!
- If you don’t have a spiralizer, you can just dice the veggies
- This also makes a great calzone filling or pizza topping!
