So peach cobbler has been on my baking list FOREVER now and I finally got around to buying the ingredients I needed only for 4 of the 6 peaches to end up going bad before I used them 😳
I quickly pivoted and decided to make this delicious peach crisp baked oatmeal with the 2 peaches that had made it.

The cobbler will have to wait for another day, but luckily this oatmeal is an amazing stand-in until then!
I went with a streusel topping which makes it feel like more of a crisp, but is still oh-so-delicious.

Full of cinnamon, juicy peaches and a crunchy streusel, this is delicious when served with yogurt and a drizzle of maple syrup OR a scoop of vanilla ice cream!
Anyway you choose to eat it, I promise it’ll be a hit for a summer breakfast!

Ingredients
For the Streusel:
- 1/2 cup white whole wheat or all-purpose flour
- 1/4 cup rolled oatmeal
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1–2 tablespoon crushed walnuts
- 4 tablespoons room temperature butter
For the Oatmeal:
- 2 cups rolled oats
- 2 tablespoons chia seeds
- 1 teaspoon baking powder
- 2 tablespoon packed brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 large egg
- 2 teaspoons vanilla
- 1 1/2 – 2 cups soymilk (or any kind you prefer)
- 1 large or 2 small peaches, washed, pitted & cubed (optional to keep skin on)
Instructions
For the Streusel:
- Combine everything in a bowl and mix to combine. Set aside.
For the Oatmeal:
- Preheat oven to 375 degrees F and spray an 8×8 baking dish with cooking spray.
- In a large mixing bowl combine oats, chia seeds, baking powder, brown sugar, cinnamon, nutmeg, and salt. Whisk to combine.
- In a smaller mixing bowl combine egg, vanilla and milk whisking to combine.
- Add wet ingredients to dry ingredients and gently fold to combine.
- Fold in peaches, pour into prepared pan, then top with streusel (pressing down gently to ensure the streusel adheres to the batter).
- Bake for 30 minutes or until a knife comes out clean or with a few wet crumbs and the streusel crisp is just browned.
- Allow to cool for 5-10 minutes then slice and serve.

This was absolutely scrumptious!! I had some ripe peaches to use so I googled peach oatmeal recipes and thought yours looked so good! It was better than I imagined! I made it to share with my whole family and all of them loved it as well. Even my pickiest eater enjoyed it. I made it the night before and popped it into the fridge so that I could bake it the next morning. Since it thickened overnight I only baked it for about 20 min and it was done perfectly! I served it with yogurt and chopped fresh peaches. I can’t wait to try more of your oatmeal recipes!
