The weather seems to be looking up! Â Hopefully this cold stretch is just about over!
I was craving some veggies for lunch so I pulled out a bunch of stuff from the fridge to whip up an easy salad:
In the mix:
- Spring mix
- Black beans
- Baby carrots
- Hard boiled egg
- Seitan
Protein packed!
Topped with Annie’s Balsamic (one of my favorite bottled dressing):
An orange on the side:
SO sucked into House Hunters International!!

It’s even been chilly down here! And everytime I step outside the wind messes up my hair. Looks like a delicious salad! Annie knows what she’s doing with those dressings.

Balsamic is hands down my favorite dressing. Never tried Annie’s, but am a big fan of the brand they carry at Trader Joe’s…

Lunch looks so good!! Do you have any tips about changing up meals. Lately I’ve been stuck on sandwiches using Trader Joe’s whole wheat bread with a side of veggies. I am in love with eggplant sandwiches with curry sauce or hummus. LOL!
Also, I’ve never tried seitan (Is that the kind trader Joe’s sells?) I dont like tofu so I’m not sure if I’d like it. What does it taste like?

That sandwich sounds pretty darn good! But sometimes just looking through other’s blogs gives me good ideas for new meal ideas! That or Pinterest 🙂
Seitan seems to be pretty polarizing – if you don’t like tofu I’m not sure how you’d like seitan. It tends to have a bit of a bitter after taste. Definitely worth giving a shot though!

Have you seen “Love it or List it”? It’s similar to House Hunters but I love the couple on there that host/do the decorating and house-hunting.
I have! I actually watched it right before – another really good show! I don’t know if I’ve seen the couple before though – all the more reason to tune into more episodes! 🙂

It’s so hard to find a good salad dressing.. I’ve never tried Annie’s balsamic but the ginger one isn’t bad either!
