Description
this easy pasta can use whatever veggies you have on hand, a jar of spicy arrabbiata sauce and some ground turkey for a simple weeknight dish!

- 1 lb. ground turkey
- 1 lb. pasta, any kind you like best
- 2 cloves garlic, minced
- 2 cups chopped mixed veggies (I used red onion, pepper and zucchini)
- 1 24 oz. jar arrabbiata sauce (more if you like a saucier pasta)
- Salt & pepper
- Olive oil and/or butter
- For garnish: freshly shredded parmesan cheese, chopped basil
Instructions
- Cook pasta according to package instructions.
- While pasta cooks, place a non-stick pan over medium heat and add oil. Once oil is shimmering, add ground turkey, salt & pepper. Cook turkey until nearly completely browned (about 7 minutes) then place on a separate plate and set aside.
- Drain pasta, place back in pot, add butter or olive oil to prevent sticking and set aside.
- Wipe out the same non-stick saute pan used to cook the turkey, add more olive oil and place over medium low heat.
- Once oil is shimmering, add garlic and saute for 30 seconds (until just fragrant) then add veggies, additional salt & pepper as desired and saute for 6-7 minutes or until tender.
- Add turkey back to pan with veggies in addition to sauce and allow to simmer over low heat for 10-15 minutes. Add additional salt & pepper to taste.
- Serve sauce over pasta the top with shredded cheese & basil.
