For the Streusel:
- 1/2 cup all-purpose flour
- 1/4 cup rolled oatmeal
- 2 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 2 tablespoon crushed walnuts
- 4 tablespoons room temperature butter
For the Muffins:
- 1 and 3/4 cups white whole wheat flour (all-purpose flour or a 50/50 blend work too)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 heaping teaspoon pumpkin pie spice
- 1/2 cup butter, softened
- 1/2 cup lightly packed brown sugar
- 2 eggs
- 3/4 cup canned pumpkin
- 1 teaspoon vanilla extract
- 1/3 cup milk
- 1 medium or 2 small apples, peeled, cored & grated
Instructions
For the Streusel:
- Combine streusel ingredients in a bowl, working with your hands, massage butter into dry ingredients until a chunky crumb forms. Set aside.
For the Muffins:
- Preheat oven to 350 degrees
- Grease or line a 12-cup muffin tin with paper liners
- Combine dry ingredients (flour, baking powder, baking soda, salt and spices) then set aside.
- In another bowl, cream butter and sugar. Add eggs one at a time.
- Add pumpkin, vanilla extract and milk whipping until well combined.
- Add dry to wet ingredients folding until just combined (over-mixing will create a tough muffin).
- Gently fold apple into the batter
- Using an ice cream scoop, scoop even amounts of the batter into the muffin tins (filling about 3/4 of the way full)
- Top with streusel topping, pressing down gently to ensure it adheres to the muffin during baking
- Bake for 25-30 minutes or until a toothpick poked into the center comes out clean
