apple crisp baked oatmeal

Description

taking all the flavors of apple pie and apple crisp (including the streusel!) and bringing them to your morning baked oatmeal!


Ingredients

For the Streusel:

  • 1/2 cup white whole wheat flour
  • 1/4 cup rolled oatmeal
  • 2 tablespoons brown sugar
  • 1/4 teaspoon apple pie spice
  • 1/8 teaspoon salt
  • 1 tablespoon crushed walnuts
  • 4 tablespoons room temperature butter

For the Oatmeal:

  • 2 cups rolled oats
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • 2 tablespoon packed brown sugar
  • 1 teaspoon apple pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 2 teaspoons vanilla
  • 2 cups soymilk (or any kind you prefer)
  • 2 small apples, washed, cored & cubed
  • 1/3 cup roughly chopped walnuts (optional)

Instructions

For the Streusel:

  1. Combine everything in a bowl and mix to combine.  Set aside.

For the Oatmeal:

  1. Preheat oven to 375 degrees F and spray an 8×8 baking dish with cooking spray.
  2. In a large mixing bowl combine oats, chia seeds, baking powder, brown sugar, apple pie spice, ground cinnamon and salt.  Whisk to combine.
  3. In a smaller mixing bowl combine egg, vanilla and milk whisking to combine.
  4. Add wet ingredients to dry ingredients and gently fold to combine.
  5. Fold in apples and walnuts if using, pour into prepared pan, then top with streusel (pressing down gently to ensure the streusel adheres to the batter). 
  6. Bake for 30-40 minutes or until a knife comes out clean or with a few wet crumbs and the crisp is just browned.
  7. Allow to cool for 5-10 minutes then slice and serve.

Notes

  • Oatmeal will keep in an airtight container in the fridge for 4-5 days.
