apple pie streusel bread

Description

super soft, bursting with tender apples and crunchy walnuts then topped with a sweetened streusel.


Ingredients

For the Bread:

  • 1 cup butter, room temperature or softened
  • 1 cup sugar
  • 1/4 cup milk, any kind (I used soymilk)
  • 1 teaspoon pure vanilla
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon apple pie spice
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 cups apple, peeled & diced (about 2 small – medium apples)
  • 3/4 cup chopped walnuts

For the Streusel:

  • 1/2 cup all-purpose or white whole wheat flour
  • 1/4 cup rolled oatmeal
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoon crushed walnuts
  • 4 tablespoons room temperature butter

Instructions

For the Streusel:

  1. Combine all ingredients together in a bowl and gently massage with your fingers or a wooden spoon until a cohesive crumb forms.  Set aside.

For the Bread:

  1. Preheat the oven to 350 degrees F.  Grease a 9×5 inch loaf pan; set aside.
  2. In a large bowl, beat butter and sugar with an electric mixer or stand mixer until smooth (about 30 seconds).
  3. Combine soymilk and vanilla together and add into the mixture.
  4. Beat in eggs, one at a time.
  5. In a separate bowl, combine flour, baking powder, salt, apple pie spice and cinnamon.  Stir well to combine.  Toss apples in and gently fold until apples are coated with dry mixture.
  6. Add dry mixture with apples to wet and stir until just combined.
  7. Gently fold in chopped nuts.
  8. Pour batter into greased loaf pan.  Top with streusel and gently press down into the batter to ensure it adheres during baking. 
  9. Bake for 60 – 65 minutes or until a toothpick comes out mostly clean or with just a few wet crumbs.
  10. Cool completely on a wire rack before slicing.

Notes

  • Bread will keep in an airtight container or bag for up to 3 days and in the freezer for up to 2 months (I recommend wrapping individual slices in plastic wrap and storing all together in a ziploc before freezing).
