Description
super soft, bursting with tender apples and crunchy walnuts then topped with a sweetened streusel.

For the Bread:
- 1 cup butter, room temperature or softened
- 1 cup sugar
- 1/4 cup milk, any kind (I used soymilk)
- 1 teaspoon pure vanilla
- 2 eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon apple pie spice
- 1/2 teaspoon ground cinnamon
- 1 1/2 cups apple, peeled & diced (about 2 small – medium apples)
- 3/4 cup chopped walnuts
For the Streusel:
- 1/2 cup all-purpose or white whole wheat flour
- 1/4 cup rolled oatmeal
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 tablespoon crushed walnuts
- 4 tablespoons room temperature butter
Instructions
For the Streusel:
- Combine all ingredients together in a bowl and gently massage with your fingers or a wooden spoon until a cohesive crumb forms. Set aside.
For the Bread:
- Preheat the oven to 350 degrees F. Grease a 9×5 inch loaf pan; set aside.
- In a large bowl, beat butter and sugar with an electric mixer or stand mixer until smooth (about 30 seconds).
- Combine soymilk and vanilla together and add into the mixture.
- Beat in eggs, one at a time.
- In a separate bowl, combine flour, baking powder, salt, apple pie spice and cinnamon. Stir well to combine. Toss apples in and gently fold until apples are coated with dry mixture.
- Add dry mixture with apples to wet and stir until just combined.
- Gently fold in chopped nuts.
- Pour batter into greased loaf pan. Top with streusel and gently press down into the batter to ensure it adheres during baking.
- Bake for 60 – 65 minutes or until a toothpick comes out mostly clean or with just a few wet crumbs.
- Cool completely on a wire rack before slicing.
Notes
- Bread will keep in an airtight container or bag for up to 3 days and in the freezer for up to 2 months (I recommend wrapping individual slices in plastic wrap and storing all together in a ziploc before freezing).
