this easy grain salad combines peppery arugula with sweet cherries, salty feta & nutty farro finished off with crunch walnuts for a flavor & texture explosion in every bite!
- 4 large handfuls arugula
- 1 cup farro (cooked in low sodium vegetable stock)
- 1/2 cup feta
- 1 cup fresh cherries, pitted
- 1/4 cup walnut halves, roughly chopped
- 1/4 red onion, sliced thin
- salt & pepper, to taste
- balsamic vinaigrette (or dressing of choice)
- Combine everything in a bowl, toss together & enjoy!
