For the Croutons:
- 1/2 loaf whole grain bread, cubed
- Olive oil
- Salt
For the Salad:
- 2 large handfuls of torn red leaf boston bibb lettuce
- 2 radishes, washed and thinly sliced
- 2 small tomatoes, sliced into wedges
- 1/4 cup diced onion
- 1 carrot, peeled and chopped
- 1/2 an avocado, diced
- 1/4 cup feta or goat cheese
- Salt and freshly ground black pepper to taste
- Optional toppings: homemade croutons, balsamic vinaigrette (or other dressing of your choice)
Instructions
For the Croutons:
- Preheat oven to 425 degrees F
- Line a baking sheet with parchment paper and place cubed bread in a single layer
- Drizzle with olive oil & sprinkle with salt
- Use your hands to toss so bread cubes are well coated
- Bake for 10 minutes or until crispy
For the Salad:
- Combine ingredients into a bowl, toss with dressing of your choice
