peach crisp baked oatmeal

Description

this baked oatmeal brings all the flavors of a delicious peach crisp directly to your morning meal! serve it with yogurt or even ice cream for a delicious summer meal.

For the Streusel:

  • 1/2 cup white whole wheat or all-purpose flour
  • 1/4 cup rolled oatmeal
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 12 tablespoon crushed walnuts
  • 4 tablespoons room temperature butter

For the Oatmeal:

  • 2 cups rolled oats
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • 2 tablespoon packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 large egg
  • 2 teaspoons vanilla
  • 1 1/22 cups soymilk (or any kind you prefer)
  • 1 large or 2 small peaches, washed, pitted & cubed (optional to keep skin on)

Instructions

For the Streusel:

  1. Combine everything in a bowl and mix to combine.  Set aside.

For the Oatmeal:

  1. Preheat oven to 375 degrees F and spray an 8×8 baking dish with cooking spray.
  2. In a large mixing bowl combine oats, chia seeds, baking powder, brown sugar, cinnamon, nutmeg, and salt.  Whisk to combine.
  3. In a smaller mixing bowl combine egg, vanilla and milk whisking to combine.
  4. Add wet ingredients to dry ingredients and gently fold to combine.
  5. Fold in peaches, pour into prepared pan, then top with streusel (pressing down gently to ensure the streusel adheres to the batter). 
  6. Bake for 30 minutes or until a knife comes out clean or with a few wet crumbs and the streusel crisp is just browned.
  7. Allow to cool for 5-10 minutes then slice and serve.
