Description

these white chocolate cranberry cookies are a must for my family during the holiday season. made with just 12 ingredients and done in about 10 minutes, they’re as delicious as they are easy to make!


Ingredients

  • 1/2 cup butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 1/4 cup white whole wheat flour (all-purpose works here as well!)
  • 3/4 cups rolled oats
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 6 oz. white chocolate chips
  • 1/2 cup dried cranberries

Instructions

  1. Preheat oven to 375 degrees F.
  2. Beat butter and sugars with an electric mixer until smooth.
  3. Add egg and vanilla, mixing well until combined, about 2 minutes.
  4. Stir in flour, baking powder, salt, and cinnamon with the mixer on medium speed.
  5. Beat in oats. Mix until dough comes together. Add in 1 tablespoon milk if the dough is crumbly.
  6. If dough is still crumbly, add milk 1 tablespoon at a time until it comes together.
  7. Gently fold in white chocolate chips and dried cranberries.
  8. Roll into big 1 inch balls.
  9. Set on a baking sheet lined with parchment or a silpat, about 2 inches apart.
  10. Bake for 9-11 minutes.

Notes

  • Cookies will keep in an airtight container for up to 4 days at room temperature or 1-2 months in a freezer safe bag or container in the freezer.
