Description

corn and zucchini bring springtime to your pizza!  this fresh take on the usual pizza is a great dish to usher in spring with!  using just 6 ingredients and 15 minutes of your time, it’s as easy as it is delicious!


Ingredients

Scale
  • 1 whole wheat pizza dough crust (such as Boboli) or 1 lb. fresh whole wheat pizza dough, rolled out into a circle
  • 1 medium zucchini, thinly sliced or spiralized
  • 1/3 cup yellow corn (fresh, frozen or canned!)
  • 1 ball fresh mozzarella cheese
  • Garlic oil (see note)
  • Fresh black pepper

Instructions

  1. Preheat the oven to 400 degrees F
  2. Drizzle pizza crust with olive oil
  3. Rip mozzarella cheese into chunks and place a few on top of the garlic oil
  4. Layer zucchini and corn evenly across the pizza
  5. Rip more mozzarella cheese into chunks and place on top
  6. Bake for about 10 minutes or until cheese starts to brown and bubble
  7. Remove from the oven
  8. Sprinkle with fresh black pepper before serving

    Notes

    • For the garlic oil, mix 1 cup extra virgin olive oil, with 6 cloves minced garlic
