Avocado, Turkey Bacon & Over Easy Egg Croissant Sandwiches
flaky croissants are filled with creamy avocado, an over easy egg and crisp turkey bacon for a holiday brunch dish everyone is sure to love!

- 2 croissants
- 2 slices turkey bacon
- 1 teaspoon butter or margarine (more as needed)
- 2 large Eggland’s Best eggs, cooked over easy (or any way you like!)
- 1 ripe avocado, mashed and divided into two
Slice croissants in half lengthwise. Meanwhile, cook turkey bacon in a non-stick skillet over medium-low heat until browned and the edges begin to curl. Remove from heat and set aside.
Into the same pan (no need to wipe it out, the bacon drippings make the egg even more flavorful!), place butter or margarine, swirling the pan to coat.
Crack Eggland’s Best eggs directly into the pan and allow them to cook until the whites become opaque. Carefully flip each egg and cook on the other side for another 2-3 minutes. Remove from the heat and set aside.
Spread your mashed avocado onto both sides of your halved croissants then layer on your egg and bacon onto each sandwich. Slice and serve!
