Avocado, Turkey Bacon & Over Easy Egg Croissant Sandwiches

flaky croissants are filled with creamy avocado, an over easy egg and crisp turkey bacon for a holiday brunch dish everyone is sure to love!

Ingredients

  • 2 croissants
  • 2 slices turkey bacon
  • 1 teaspoon butter or margarine (more as needed)
  • 2 large Eggland’s Best eggs, cooked over easy (or any way you like!)
  • 1 ripe avocado, mashed and divided into two

Instructions

  • Slice croissants in half lengthwise. Meanwhile, cook turkey bacon in a non-stick skillet over medium-low heat until browned and the edges begin to curl. Remove from heat and set aside.
  • Into the same pan (no need to wipe it out, the bacon drippings make the egg even more flavorful!), place butter or margarine, swirling the pan to coat.
  • Crack Eggland’s Best eggs directly into the pan and allow them to cook until the whites become opaque. Carefully flip each egg and cook on the other side for another 2-3 minutes. Remove from the heat and set aside.
  • Spread your mashed avocado onto both sides of your halved croissants then layer on your egg and bacon onto each sandwich. Slice and serve!
