chickpea cobb salad
this is my spin on a cobb salad. it's fresh, delicious and super easy to pull together making it a warm weather must.

- 3 cups romaine lettuce, washed and roughly chopped
- ~1/2 15 oz. can chickpeas, drained & rinsed
- 6 pieces bacon, cooked and chopped
- 2 eggs hard boiled and quartered lengthwise
- 1/3 cup crumbled feta cheese
- 1 avocado sliced
- 1 cup cherry tomatoes, halved
- salt & pepper to taste
- 1/4 - 1/3 cup diced red onion
