Ingredients

For the Streusel:

  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oatmeal
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 tablespoon crushed walnuts
  • 4 tablespoons room temperature butter

For the Muffins:

  • 1 and 3/4 cups white whole wheat flour (all-purpose flour or a 50/50 blend work too)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 heaping teaspoon pumpkin pie spice
  • 1/2 cup butter, softened
  • 1/2 cup lightly packed brown sugar
  • 2 eggs
  • 3/4 cup canned pumpkin
  • 1 teaspoon vanilla extract
  • 1/3 cup milk
  • 1 medium or 2 small apples, peeled, cored & grated

Instructions

For the Streusel:

  1. Combine streusel ingredients in a bowl, working with your hands, massage butter into dry ingredients until a chunky crumb forms.  Set aside.

For the Muffins:

  1. Preheat oven to 350 degrees
  2. Grease or line a 12-cup muffin tin with paper liners
  3. Combine dry ingredients (flour, baking powder, baking soda, salt and spices) then set aside.
  4. In another bowl, cream butter and sugar. Add eggs one at a time.
  5. Add pumpkin, vanilla extract and milk whipping until well combined.
  6. Add dry to wet ingredients folding until just combined (over-mixing will create a tough muffin).
  7. Gently fold apple into the batter
  8. Using an ice cream scoop, scoop even amounts of the batter into the muffin tins (filling about 3/4 of the way full)
  9. Top with streusel topping, pressing down gently to ensure it adheres to the muffin during baking
  10. Bake for 25-30 minutes or until a toothpick poked into the center comes out clean
