cinnamon banana oatmeal

Description

these easy, creamy oats are one of Owen’s absolute favorite breakfasts!  they’re great to make ahead and serve throughout the week!


Ingredients

Scale
  • 1 cup rolled or old fashioned oatmeal
  • 12 tablespoons chia seeds (this is more for texture – more = thicker oatmeal because the chia seeds suck up the oats)
  • 2 teaspoons cinnamon (more/less as desired!)
  • 2 cups water or milk
  • 2 large bananas, peeled & mashed
  • Optional toppings: peanut butter, banana, walnuts, brown sugar

Instructions

  1. In a non-stick saucepan combine oats, chia seeds, cinnamon, water or milk and bananas.  Turn stove on over low heat and begin stirring.  Continue to stir oats frequently while cooking (turning the heat down if they begin to stick to the sides of the saucepan).
  2. Remove oats from heat when the oats are mostly gelatinous and most of the water is absorbed.  If eating immediately, divvy up into two bowls and top with toppings of choice (I recommend if using peanut butter, stirring directly into the warm oats so that it’s well-distributed throughout) . 
  3. If saving for later, store in an airtight container in the fridge for up to 3 days.
