easy french toast roll ups

these easy french toast roll-ups can be filled with whatever you want and make a perfect breakfast or grab & go snack!

Ingredients

  • 2 large eggs
  • Splash of milk any kind works!
  • 1/4 - 1/2 teaspoon ground cinnamon more or less as desired
  • 6 slices of whole wheat bread stale or day old works best – we love Nature’s Own
  • 4-6 tablespoons peanut butter
  • 1 medium banana peeled & thinly sliced
  • Optional: Sprinkling of cinnamon
  • Butter for greasing the pan

Instructions

  • In a large, shallow bowl (or plate with high edges), combine eggs, splash of milk and cinnamon. Whisk together until fully combined.
  • Cut the edges off the slices of bread then roll out each slice with a rolling pin.
  • Fill each flattened slice of bread with peanut butter then place banana slices in a single later at the edge (you can also mash the banana).  Sprinkle with cinnamon if desired.
  • Starting from the banana side, roll the bread up tightly then dip into the egg/milk/cinnamon mixture.
  • Place a small amount of butter onto a preheated griddle or a pan that has been placed over medium heat. Spread butter all around to coat the surface then place roll-ups on. Cook roll-ups 1-2 minutes per side making sure you cook each side.
  • Remove, let cool for a few minutes and serve!

Notes

These will keep up to 4 days in the fridge in an airtight container.
You can also freeze up to 2 months in an airtight container. When ready to serve, simple defrost in the microwave (or leave out in a ziploc bag on the counter overnight).
