Baked Mac and Cheese

It’s been a crazy day!

I had a dentist appointment at 11:30 and then ran some errands and didn’t end up making it home until well after 3pm!

Luckily my waffle breakfast held me over quite well!

When I got home I snacked on an apple and peanut butter and started in on dinner!

Baked macaroni and cheese.

We’ve had a streak of rainy days here so comfort food has been where it’s at!

And truly, what’s more comforting than pasta covered with cheese?

I’ll tell you my friends, not much.

Baked Macaroni and Cheese (adapted from Health)

Ingredients:

  • 2 1/2 cups non-fat milk
  • 1/4 cup flour
  • 1/8 teaspoon ground nutmeg
  • 3 ounces grated cheddar cheese
  • 2 ounces grated gouda cheese
  • 1 ounces grated gruyΓ¨re
  • 1 ounce swiss cheese
  • 16 oz cooked organic Gobetti pasta
  • 1 cup unseasoned bread crumbs
  • 2 tablespoons freshly grated Parmesan cheese
  • 2 teaspoons dried thyme
  • 2 teaspoons dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Olive oil

Directions:

  1. In a medium saucepan, whisk together milk and flour and bring to a boil over medium heat.
  2. Reduce heat, add nutmeg, and cook, stirring, until thickened (about 10 minutes).
  3. Add cheddar cheese, gouda cheese, gruyère and swiss cheese; whisk until melted (1 minute).
  4. Add cooked gobetti pasta and stir to combine.
  5. In a small bowl, toss bread crumbs, Parmesan cheese, thyme, parsley, olive oil, salt, and pepper.
  6. Place a greased, oven-proof dish on a rimmed baking sheet; spoon pasta mixture into the dish and sprinkle each with bread-crumb topping.
  7. Bake at 400Β° until topping is browned and cheese is bubbling (30-35 minutes).

    My mom’s throwing a dinner gathering this Friday and told me I’m in charge of desserts. I’ve been browsing through your recipes and decided it was going to be either candy blondies or candy shortbread bars. I have never tried either and was wondering which one was a) easier to make b) tastier. I want to make a good impression!
