My sister and I are obsessed with Maine.

Both my older sisters went to college in Maine (Bowdoin and Bates) and we’ve sort of been obsessed ever since.

My sister has this “Maine” sign hanging in her kitchen and every time I see it reminds me I desperately need to get there for a trip soon!

I headed to the gym around noon and had a great workout: 30 minutes on the elliptical + stretching. Β Yoga is on tap for later.

I came back to the apartment, showered, knocked out a couple of tasks and then was ready for lunch!

A big salad…an old mainstay:

I pulled a bunch of items out of the freezer and fridge to make this and I have to say…as a “use what you have” type of dish, the flavors actually worked really well together!

I piled some 50/50 spring mix/spinach blend with:

  • Cucumbers
  • Carrots
  • Popcorn shrimp
  • Hard boiled egg
  • Hummus (which came after the picture)

The hummus was by and large the best part. Β Better than any dressing I could’ve used.

        The Week (http://theweek.com/) is the best magazine for people who don’t have time to keep on the news every day. It comes once a week – usually on Friday or Saturday – and it is a compilation of a lot of different news sources on the top stories from the week. It includes everything from national news, to international news, arts, travel, etc. So, I get my education from the Week and my girliness from Real Simple! πŸ™‚

    Hey Cait, I love your sister’s Maine sign! My family has had a summer house in York, ME for years. The lighthouse in the back of the sign is in our town and is so very beautiful. I was just saying to my dad last weekend that we are so lucky to be surrounded by such beauty… I don’t want to take it for granted. They say that Cape Neddick Light House is the most photographed one in the country. I don’t know if it is true but the locals love to say that.

    I am inspired by your lunch to go home and make myself something healthy and delicious. I have been following your blog for a few months and love how well you balance healthy eating, exercise and a few indulgences.

      Oh that’s so neat! I had no idea about the Cape Neddick Light House! And you definitely are so lucky to be surrounded by such beauty – I think that every time I’m in Maine!

    My husband and his buddy spent one entire summer break of college living and working in Maine… just for fun! It was totally random but they are adventurous like that. I have only been to Maine once (for a very short moment) but would LOVE to go back and really spend some time. Your salad looks awesome!

    I want to go to Maine so bad… someday… Cait, when you work out on the elliptical, how do you make it fun? I have a thing against ellipticals and I cannot stand it for more than 10 minutes. Any advice?

      Haha – I can definitely understand that. When I first injured my back and was confined to the elliptical I was SO upset! I do a variety of different things, a lot of mental games (checking off 5 minute clips at a time), watch TV if it’s available or make a really good mix on my ipod that makes the time go by. If you can’t stand more than 10 minutes, you can always do 10, hope off, try another machine for 10 and then hop back on for another 10! Good luck!

    I love Maine too. I went to Bowdoin (I actually transferred and then regretted it), and my boyfriend is a Bates guy. I have dreams of buying a summer house in Maine, though I better first save up for a first house. Hmm…lots of work.

      Ah that’s so funny! Bummer that you didn’t like your transfer to Bowdoin – I almost went there myself! My sister and I have dreams of doing the same – time to start saving our pennies!!

    I read Shape, Fitness and Self, and while I haven’t read Oxygen, I’ve heard nothing but good things. My grandma used to subscribe me to Real Simple which I really liked and I used to get Rachael Ray too. The recipes started getting more complicated and being a lactose intolerant vegetarian, there was little I could usually make.. πŸ™
