Twilight Dinner

Thanks for the pass on the repeat lunch guys :) My stomach very much appreciates you letting it eat what it craves ;)

In other news, I’m really not digging this new layout. I like the general format but it’s a PAIN to work in. My pictures randomly move themselves all over the place and my text floats all over the page… Eventually I’d love to get my site designed by someone, but for now I hope you don’t mind my playing around with different layouts until I find one that works for both you AND me I’ll try not to do it TOO often and I’ll make sure to warn you beforehand so you’re not totally thrown off…but if you see lookin’ a little different in the coming days, just know that’s why :)

This afternoon I munched on a crunchy gala apple and a Nutz over Chocolate Luna bar


Mmm. Love those Lunas :)

When I got home I ran an errand by foot and jogged home to do a nice 50-minute yoga sesh. It was divine.

Before hopping in the shower I popped some asparagus, corn and a veggie burger in the oven. They got nice and toasty (except my asparagus fail) as I showered and were hot ‘n ready for me to chow down once I was dressed.

It was another dinner by twilight. I gotta stop eating so late, it’s totally killing my photography ;)

My asparagus were floppy jalopies. Not crisp like I like them to be but it was getting later and later and they weren’t getting any crispier so I just pulled ‘em out. Still tasty though!

And as I typed it I crunched on another delicious gala for a sweet ending to this day :)

Awesome Discussion

This afternoon I snacked on a gala apple as I worked and pre-run I dug into my new Probar stash!


Mmm – this was about 1/3rd of the Art’s Original Blend.  It was absolutely DELICIOUS!


It fueled me perfectly for my quick 20-minute run with Mike. Actually, I felt like I could’ve gone even longer but I decided not to push it. :)

After I got home and showered I started in on dinner.

I broiled up a little more of that corn on the cob…


this stuff is so good, I just can’t get enough!

And I paired it with a savory salmon burger that I laid on top of a whole wheat Arnold sandwich thin and topped with some lettuce and mustard -


And my sweet ending was a juicy gala :)


Such a great post-run, late-night meal

I absolutely LOVED hearing all your thoughts on the Time Magazine article. I knew that it would open up the door to some awesome discussion! It seems that most of us agree that while the article makes some good points – we don’t completely agree with the angle that was taken.

Ultimately we should all just feel good knowing that we choose to exercise for health rather than weight loss and that we understand the difference

In other news, I had ANOTHER sweet package waiting for me upon arriving home tonight. I feel like such a lucky girl to be receiving the opportunity to try out all these awesome products!

Sabrina over at Clif Bar sent me a box filled with one of my absolute FAVS -


LUNA BARS!! Most of you probably know how much I love these guys. I definitely consider them a healthy pre-run/snack bar and I’m so psyched to dig into this stash. Thanks so much Sabrina!!

Packages o’ Plenty!

It was a day FILLED with exciting packages!

I came home to not ONE, but TWO awesome items in the mail.

The first was my Sunshine Burger coupons that I won from Melinda’s awesome giveaway!

IT’S MY PROBARS!!! I owe a HUGE thanks to Kendall over at Probar for sending these my way. I’ve been just dying to try these since I found out about them and now I finally have my chance!

Are those a thing of beauty of WHAT! I can’t wait to try out every single flavor – they all sound so incredibly amazing…but the one that’s definitely first on my list?

While I opened and photographed all my awesome giveaways I snacked on some more of those delicious Stacy’s Simply Naked pita chips with hummus -


then started in on some din-din:

I broiled a couple of panko breaded cod filets that I laid over a small bed of lettuce and topped with some homemade tartar sauce -


With…as I’m sure you gathered…some roasted corn on the cob

I’m off to relax with a little Friends and maybe some ice cream if I have the room

Mish-Mosh Dish-Tosh

Your favorite workout answers gave me SUCH motivation! I’ve never tried hot yoga, but I’m definitely curious to do it! It seems people either LOVE it or HATE it so I wonder which type I’d be…

Anyway – despite my HUUUUGE coffee this morning, I found myself really dragging around 1pm and fell prey to the Starbucks in our building

I devoured this guy! It was totally insane, but I guess I needed it. Just hope I can actually fall asleep tonight!

After work I headed to Best Buy and Staples to begin my camera hunt but I didn’t have much luck. I found one that I liked but of course they were out of stock. It’s probably better I didn’t buy anything today…I need to do a bit more researching before I commit

When I got home I contemplated going for a run but decided it was better to eat first since I had a somewhat early lunch.

Dinner ended up being a mish-mosh of wonderful!

I threw together a big salad topped with a veggie burger, almond slivers and half a gala apple -

Paired with a roly poly plum -

And some more o’ that delicious roasted corn -

Filling and delicious, just what I needed!

After dinner I was craving a little something sweet so I broke out the last of my rainier cherries -

I plowed straight through this stash. They call these “nature’s candy” and my-oh-my, they seriously couldn’t be more on point with that! I’m so sad they’re gone!!

I’m one exhausted girl so I’ll definitely be calling it an early night (guess I’ll be able to sleep after all!) but hopefully I can get a small run in first!

Off to digest/relax with Two and a Half Men for now though…Night everyone!

Shopping and Salmon and Gelato – Oh My!

What a night!

I can’t believe I’ve only been in Atlanta for a matter of hours – I feel like we’ve already done so many exciting things 

We took a trip to Whole Foods (check out the shop here) around 4pm and ended up getting ingredients for a fabulous dinner of salmon, asparagus, fresh corn on the cob and whole wheat couscous.

It was all hands on deck to get the meal on the table and it was so much all pitching in to pull it all together.

We consulted a couple cookbooks…

…but ultimately ended up improvising to our tastes!

We drizzled a little olive oil, s+p over both the salmon and the asparagus -

Then, being the good little Greek girls that we are, added a little o’ this to the salmon -

Mmm – it came out absolutely delicious!

While those babies were cookin’ up, Patrick had wrapped the corn in tinfoil and popped it in the oven right alongside everything else.  When it came out, it was toasty and perfectly cooked -

Finally, Shannon whipped up the couscous and we plated everything -

I WISH you guys could have smelled the aromas – they were tantalizing!  If this is living in Atlanta, count me in!

It was some seriously good eats guys, I was wishing I could share it with you all the whole time!  Don’t worry though, Clara made sure to take a taste in honor of you!

After dinner we took a nice long walk to digest our delicious dinners and just happened to stumble upon Paolo’s Gelato

Ultimately I just chose a small torch cone with….DAIRY-FREE MINT CHOCOLATE!!

I was so excited that this was the dairy-free option for the night!  It was the flavor I had my mind set on to begin with so imagine my surprise when I saw this Seriously a perfect end to a perfect night.

I’m off to bed as I’m completely exhausted (in a good way!!) from this first day of vacation!  I can’t wait to sleep in tomorrow and wake up recharged for another day of fun.  Night all!
