A Baked Harvest

My class materials came!

I now officially have more GRE materials than one single human should ever need.

Around noon I broke for a quick lunch.

It’s still a little gloomy out there so I was craving a nice warm lunch.

I remembered I had picked this guy up at Target the other day which made for the perfect quick meal.

I’ve had this thing once before and loved it just as much this time around.  Highly recommend it for a quick and healthy meatless option.

Mine didn’t look quite like the picture on the box (actually it’s more akin to baby back ribs or pork chops!) but that didn’t stop it from tasting delicious.

On the side I served it with a Joseph’s Lavash that I ripped up into managable pieces:

A nice warm, easy meal which is just what I needed!

    (Well, fancy in comparison to my usual yogurt, fruit and granola mixture I eat every day…ha!)

    Good luck!!!

    I’ve had that Mayan Harvest in my freezer for way too long. I’m sure I’ll be eating that when I come home to an empty fridge next week. 🙂

    I just had one of the new Kashi Steam meals for dinner last night, which I featured on today’s WIAW, and seriously, for being frozen entrees, no variety has ever let me down. I love the Penne with Pesto and the Enchiladas, but I have yet to try the Mayan Harvest. Thanks for letting me know its good!

      Oooh I’ve been seeing those steam meals lately and have been curious to try them. I definitely have to pick one up soon!

    ugh, study mode! I loved it and hated it so much.

    that Mayan harvest bake is maybe my favorite frozen lunch! so spicy and sweet. and you’re right, it does feel like comfort food… ready in ten minutes flat.

    Ahh… try to think of math problems as mini games 🙂 i know… hard… but maybe it’ll help?

    I also love that Kashi meal. It’s one of my favorites.
