TOO LONG

It’s been a productive afternoon around here!

Or at least around the kitchen 🙂

Can’t wait to share my latest baking adventures with you all.

I broke around 12:30 to make a lunch that I haven’t had in AGES!

A veggie burger salad!

I have no idea why it’s been so long, but it’s unacceptable.

This is a fabulous lunch.

Into the bowl went:

  • Spring mix
  • Shredded carrots
  • Edamame
  • Morningstar Farms Garden Veggie Patty
  • Craisins
  • Avocado
  • Almond slivers

An incredible mix.

Topped with olive oil and red wine vinegar:

Chad made these as a purchase this weekend but I think I’m eating the majority of them on him!

Good thing he loves me!

    I don’t think I’ve had a veggie burger salad in ages either! I’m stuck in a lunch rut at the moment and have been eating the same thing ALL of time but I can’t help it, I just love it so much. You’re inspiring me to branch out. 🙂
