WHIPPED BISCOFF AND CHOCOLATE CREAM PARFAIT

If there anything better than whipped chocolate?

I’ll tell you – there’s not.

Unless you add Biscoff spread on the bottom and whipped cream on the top.

Then things really get interesting.

But I didn’t stop there, because…let’s be honest, when it comes to dessert, the best motto to live by is “the more, the better” – so I sprinkled some mini chocolate chips on top and stuck a mini biscoff cookie right on into the whipped cream!

Whipped Biscoff and Chocolate Cream Parfait (adapted from Martha Stewart)

Serves 2

Ingredients:

For The Chocolate Cream: 

  • 1/2 cup semisweet chocolate chips
  • 3/4 cup heavy cream

For The Biscoff Cream: 

  • 3/4 cup heavy cream
  • 2 tablespoons sugar
  • 1/2 cup smooth Biscoff spread

For The Topping: 

  • Mini chocolate chips
  • Whipped cream
  • Biscoff cookies

Directions:

  1. Make the Chocolate Cream: Place chocolate chips in a metal bowl. Heat cream in a small saucepan until it bubbles around edges. Pour cream over chips, let stand 5 minutes; stir until smooth. Refrigerate until chilled, about 10 minutes. Using an electric mixer or a whisk, whip the chocolate until smooth and fluffy.
  2. Make the Biscoff Cream: In a medium bowl, whip cream to stiff peaks. Whisk in sugar. In a medium bowl, fold whipped cream into Biscoff.
  3. To assemble: Divide Biscoff cream equally among two juice glasses; top each with chocolate cream, whipped cream, mini chocolate chips and one biscoff cookie. Cover with plastic wrap. Chill until ready to serve.

    Woah Cait, this looks amazing but a lot of your posts lately have been really indulgent or sweet of late.

    I know you believe in moderation but a lot of us don’t have your metabolism and def. can not afford so many treats while trying lose weight or stay in shape. Also, “the more, the better” when it comes to dessert thing isnt really moderation. :/ I know you are trying something new with the blog but can you please also share some healthy recipes soon?

      Of course! I’m always balancing my recipes (chicken tikka masala made with brown rice and boneless skinless chicken breast, the Easy Mason Jar Peach Parfait, the Whole Wheat Yeasted Blueberry Belgian Waffles, the Starbucks Perfect Oatmeal at Home and the Whole Wheat Pesto Pizza with homemade pesto are recent lighter recipes I’ve featured lately) – I don’t tend to focus on “healthy” versus “not healthy” when it comes to individual foods – but rather allow myself to enjoy everything in moderation as a part of my overall healthful routine. I truly believe there are no bad foods.

      Thank you for voicing your opinion and I hope you’ll continue to read despite the slight shift in the blog from day-to-day eats to a more recipe-based read 🙂

    This looks amazing, and I want to make it…but please excuse my ignorance: what the heck is biscoff spread? Is it in most supermarkets? I live in Wyoming, and often can’t find the ingredients I need for recipes I find on the web. Love your recipes — I have pinned a bunch of them!

      Aw thank you! Biscoff spread is a cookie butter made with Biscoff Cookies. You can read about it here. I find it in most grocery stores around me and I think Amazon.com has it! Trader Joe’s also makes a version of it called “Cookie Butter.”

      If you can’t find it though – peanut butter would work perfectly!

    In the recipe direction #2, it ways to fold whipped cream into peanut butter…..you do mean the biscoff spread, right?:) Can’t wait to try this!

    Yum yum! I made this tonight and topped the whipped cream off with warm drizzled caramel. This recipe is definetely one I will continue to make. I’m a fan of Biscoff and chocolate, but together…look out!

    Oh my goodness…OH MY GOODNESS! This is divine. I’ve never tried Biscoff before, but will be adding a jar…make that several to my cupboard. I am going to make this for our neighborhood Academy Awards buffet and I know I am going to be sooooo POPULAR! Thanks for sharing.
