Is it just me or do sprinkles tend to make everything better?
I don’t know what it is, but it’s really just the truth. So here I give you, no-bake birthday cake bites to help get you through Thursday – the day that’s almost the weekend, but not quite.
These things are easy to make, perfectly safe for no-bake consumption and just the perfect little treat!
They’re made with oat flour so you’re getting some whole grains along with protein and heart-healthy fat thanks to the addition of peanut butter.
You can mix it up and use whatever nut butter you like – and if you’re not a sprinkles fan you can leave them out, but I would argue that that’s half the fun of these little guys.
Ingredients
- 1 cup oat flour
- 1/4 cup natural peanut butter
- 1/4 cup maple syrup
- 2 teaspoons vanilla
- 2+ tablespoons plain, unsweetened soymilk
- 2 tablespoons mini chocolate chips
- 2 tablespoons rainbow sprinkles
Instructions
- Combine oat flour, peanut butter, maple syrup, vanilla and milk in a food processor and turn on
- Begin to process streaming in additional milk as needed until the dough comes together and reaches your desired consistency
- Fold in chocolate chips and rainbow sprinkles
- Using a cookie scoop, scoop out balls of dough and place on a baking sheet lined with parchment paper
- Place in a fridge for at least an hour to allow dough to harden
- Remove from the fridge, and roll each bite between your hands to smooth out (not a necessary step, you can absolutely leave as is)
- Transfer to an airtight container and store in the fridge
