Don’t you love a meal that looks like you spent a TON of time on it but it’s actually ridiculously easy to pull together?
I definitely do! Even if you’re just cooking for yourself, it makes breakfast so much more fun in my opinion.
These easy pancake roll-ups definitely fall into that category!
I recently bought a bag of Birch Benders “just-add-water” pancakes at the store the other day and decided that I wanted to do something a little different from the usual pancake & syrup song and dance (don’t get me wrong, I love that dance, I just wanted to get a little more creative!)
That lead to me making HUGE pancakes and treating them like wraps! And let me tell you, the possibilities here are absolutely endless. My husband and I have already tried tons of different combinations.
When you mix the batter, make it a little more on the watery side so that it will spread pretty thin (this makes it easier to roll). I used about 1/3 – 1/2 cup of batter to make about an 8-inch disc. The beauty of these though is that there’s no science. Try one and adjust as needed from there!
My favorite so far has been these fruited nut butter & yogurt pancakes. Finished off with a little drizzle of syrup. I also piped some additional yogurt on the top just to add a little more whimsy to the dish.
But we’ve tried:
- Whipped cream cheese with cinnamon & sugar
- Nutella with strawberries
- Sunflower seed butter with peaches
- Cheesy egg & veggie scramble
- Peanut butter and banana
There’s literally no end to the possibilities. Think up your favorite flavor combinations and just go for it!
It’s also a SUPER fun dish to get kids involved with! Lay out a bunch of different toppings and let them go to down! It would also work with ice cream and sprinkles – just don’t blame me for the mess you end up with afterward
