It may not yet be officially summer, but the summer heat has absolutely arrived here in Charlotte which has me craving refreshing foods!
I’ve been loving these easy little strawberry yogurt ‘cheesecakes’ for snacks and after dinner treats lately. Not only are they SO simple to pull together but they’re just the perfect little after-meal treat.
They’re lightly sweet thanks to the strawberries and you get a little crunch from the graham cracker crumbs while also getting a hefty dose of protein thanks to the yogurt.
You can also make these whatever you want them to be! You can switch up the yogurt flavors and the fruit to make an endless combination of flavors. You can have a different one every night!
I’ve even gotten my husband into eating them! Sometimes we’ll put a layer of chocolate chips in there too (because let’s be honest, is there anything better than fruit and chocolate!?) which is next level delicious.
There’s really no end to the different flavors you can create for this which is definitely my favorite part about them. We’ve done these with cherries, peaches and strawberries and with more and more produce coming into season, I can’t wait for what’s to come next!
Ingredients
- 2/3 cup graham cracker crumbs
- 12 ounces of greek or skyr yogurt (i use Siggi's) - any flavor you like!
- 1 cup sliced strawberries (or fruit of choice)
Instructions
- Into 2 bowls, layer 1/2 the graham cracker crumbs followed by 1/2 the yogurt and 1/2 the fruit in a dish and serve!
