Egghead

0 · May 23, 2012 · 14 Comments

I had the biggest craving for eggs when dinner time rolled around…so that’s what I had!

I boiled up two eggs and toasted up a whole wheat bagel (this was Thomas’ 100% Whole Wheat) that I topped with earth balance.

I love these bagels – they really squash the “real bagel” craving without being overly filling.  Not to mention their flavor and texture is just incredible.

These eggs were perfect…they were just what I wanted!

With orange juice on the side:

A perfect meal!

From the way she was stalking the plate…I’m pretty sure Clara thought it looked pretty perfect as well…

Mom and I are on the couch now, getting ready to dive into the second disc of Damages!

Do you have a method for boiling your eggs? It looks like they came out perfectly!

I submerge the eggs almost completely in water, add a dash of sea salt then put the burner on high. As soon as the water starts to boil I put a timer on 10 minutes then remove from the heat, soak in cool water and peel! 🙂

I occasionally get egg cravings like this, but the weird thing is the rest of the time the thought of them makes me feel icky! Oh, tastes and desires, you are a strange thing… Mostly now I want your bagel!

Haha – the bagel was SO good! It had been such a long time since I’d had one!
