MINI BACON & CHEESE PRETZEL BREAD PANINIS

Paninis

Pretzel bread is amazing.

I literally can’t go to Trader Joe’s without picking up one of those little rolls.

I also don’t normally make it out of the parking lot (or to the cash register) without eating it straight out of the bag…

But this time I actually did…and I made something pretty delicious with it.

Mini bacon and cheese pretzel bread paninis.

They’re not the healthiest things in the world – but to offset that I made them smaller so that they can be more like a snack.

One or two of these little guys and you feel completely satisfied!

{mini bacon & cheese pretzel bread paninis}

makes: 6 mini paninis

ingredients:

  • 2 pretzel rolls
  • 4 slices of reduced fat colby jack (or cheese of choosing)
  • 6 slices of bacon, cooked
  • Earth balance (or butter, or oil, just something to put on the outside for a nice crust)

directions:

  1. preheat the grill, a grill pan or a panini press on medium heat
  2. slice each pretzel roll diagonally pairing the matched slices together (you should get about 3 pairs out of each loaf)
  3. slather the outsides of each of the 6 slices with earth balance (or oil/butter of choosing)
  4. split each of the 4 slices of cheese in half and place one half in between each of the 3 pairs of sandwiches along with a slice of cooked bacon
  5. place the sandwiched pieces onto the prepared grill, grill pan or panini press and cook on each side until golden brown (this will depend on the method you’re using, so watch closely!)

    Pretzels are among my favorite food, but I’ve never tried pretzel bread before. Sad life, huh? These little snacks look like the perfect bar food… Or, I suppose they’d be good as a daytime snack as well ;).

    I didn’t even know these existed at Trader Joe’s. I’m glad I didn’t know until AFTER I went there tonight.

    I am ashamed that someone who loves bread as much as I do hasn’t even heard of this bread. I will have to try this out for an app next time we have a party (read: bacon and some free time) thanks for sharing!
