Every year when the weather gets warm, the thing I look forward to most is roasting s’mores.
There’s something about it that just reminds me of my childhood and I get as giddy about it now as I did then.
Over the past few years I’ve also started coming up with creative takes on s’mores.
Last year I made these s’mores yogurt parfaits.
Before that I made these delicious indoor s’mores.
And who could forget my frozen s’mores?
And this year I think I might have just outdone myself!
This year, in honor of National Doughnut Day, I decided to make mini s’mores doughnut ice cream sandwiches. Little mini chocolate frosted doughnuts loaded with s’mores ice cream then rolled in graham cracker crumbs. Dreams really do come true.
These don’t really need a recipe. All you need is a box of mini doughnuts, a pint of s’mores ice cream (Ben & Jerry’s currently has a limited edition s’mores that I love. For this I used Gelato Fiasco) and some graham cracker crumbs! Cut the doughnuts in half, add a scoop of ice cream, press the two parts of the doughnut together then roll the ice cream in the graham cracker crumbs and enjoy!
