Chad’s dad was passing through town so we all 3 got to sit down to a nice lunch together!

We went to Pike’s – an old fashioned soda shop {and finer diner!} in Charlotte – aka – the most adorable place ever.

The last time I was here I got the black bean burger which was so good I couldn’t pass up ordering it again despite the many other good options on the menu…

I even convinced Chad’s dad to go with one too!

I ordered a simple garden salad to start off the meal but abandoned it the moment my burger came…

I piled my burger with lettuce, onions, avocado and ketchup…

Even better than I remember it being last time!  Even Chad’s dad liked his!

Such a nice little mid-day treat on this Friday 

I packed up a couple of the brownies to send home with Chad’s dad so that we wouldn’t end up eating them all ourselves…

Except it ended up backfiring because all it did was give me a craving for one of my own!

    Yum!! I love veggie burgers!! One of my favorites items to order when I go out to eat 🙂

    I want to make something like the temptation trail mix nut butter that you made. But I wanted to ask if the raisins get smoothly incorporated into the nut butter when you blend it in. I don’t want any raisin lumps…I want them to become emulsified into the peanut butter as best as it can. Thanks Cait! Have a lovely day!

      I actually took the raisins out and then folded them in by hand after processing everything else in the food processor. But I think you could keep them in too – they’d just get chopped and more incorporated. I wanted mine to remain whole which is why I picked them out first 🙂

    I had a big fat burger for lunch today and felt so happy. Haven’t had one in months! I only ate a quarter of it but polished off all my jojos. This post makes me wish the burger place had a bean burger option. Then I would’ve eaten the whole thing. I’m so horrible at Math, even if I were close to you, I will just eat dessert and read a book while you work the problems out yourself. Lol!

    Ughhh, that Math section was _the worst_! Luckily I was applying for a Lit program and they didn’t care too much about my adding skillz! Just my spelling skillz
