ROASTED ASPARAGUS WITH TOASTED WALNUTS AND FETA

Iiiiiiit’s asparagus season!!

And boy does it make me happy.

You can grill it, roast it, steam it…even fry it I suppose if that’s what you fancy.

I’ve never been super creative with asparagus because I love it so much plain.

I usually just roast it with some olive oil and salt and call it a day.

But as I was pulling it out of the fridge this time to do the usual, I saw some feta in the corner and suddenly the idea of asparagus without feta felt inconceivable.

To make it even better, I toasted up some walnuts to crumble on top and OH MAN.

It was a good call.

{roasted asparagus with toasted walnuts and feta}

ingredients:

  • 1 bunch of fresh asparagus
  • 1/3 cup feta cheese, crumbled
  • 2-3 tbsp. walnuts, roughly chopped and toasted
  • 2 tbsp. olive or canola oil
  • salt, to taste
  • 1/2 a lemon (optional)

directions:

  1. preheat the oven to 425 degrees F
  2. line a cookie sheet with tin foil and drizzle 1 tbsp. oil over it
  3. wash asparagus and chop off fibrous ends
  4. place on the prepared cookie sheet in one layer
  5. drizzle the remaining oil over the asparagus and sprinkle with salt to taste
  6. bake at 425 for 20 minutes, rotating halfway through
  7. remove from oven and sprinkle with toasted walnuts and crumbled feta

    I bet the salty feta is awesome on top of the asparagus. What a tasty dish!
