Sometimes it’s the simplest of ideas that make the best meals.
Last night I picked up a rotisserie chicken – I always forget about it as a quick and easy dinner option and I don’t know why. It really needs to be on my radar more often.
In fact, I just saw a pin for all the different things you can do with one of which I will most definitely be taking advantage in the future.
Anyway, the leftovers made the absolute best sandwich for lunch today!
I used a part of the wheat baguette that we served with some olive oil last night and loaded it with leftover chicken (skin removed…I’m just not a fan), mixed greens, avocado and spicy mustard,
For whatever reason, crusty loaf bread just makes a sandwich feel so much more special than regular old sliced bread.
On the side were baby carrots and a special treat sent to me from Harry & David!
The folks over there were kind enough to ship me their Fruit of the Month Royal Riviera pears to try and I have to say…they are SO good.
They’re so juicy they practically melt in your mouth at first bite. I would love to get a little creative with the rest of them, but if not, they’re perfect as is. Thanks again to the folks over there for thinking of me!
And last but not least, I just had to share a few of my favorite ‘Christmas card’ pictures I took of my nieces. I was going through my camera (which is a little rusty at this point!) and remembered I had them…
Too cute for words.
And now it’s back to studying…and hopefully a little yoga break!

I love rotisserie chicken! I’ve used it for chicken salads, sandwiches, wraps. I usually get one at Costco on Sunday and it lasts a while 🙂
I used to get the Costco ones too! They really are so versatile and easy…and delicious! I kinda want to use the very last of this one to make chicken tacos…
