I wasn’t quite sure what I wanted for lunch today but after poking around in the fridge for a bit, I pulled out a couple of ingredients and actually made a pretty delicious lunch!

I took the rest of the all-natural chicken strips, some feta cheese and some eggs.

I scrambled them all up together in a bowl then cooked them up in a pan.

Alongside I toasted up a slice of whole wheat bread that I topped with earth balance:

Served with a side of mixed greens and diced avocado:

Pretty dang good.

Still watching old episodes of The Office – but also trying to get a little studying done.

    Love eating eggs with any meal! I started eating them a lot in college because they’re so cheap – and then I found out that they’re also delicious!

    Eggs are so delicious!
    I love watching old episodes of the Office. I can sit all day when they have a marathon on TBS on.
