Points for anyone that knows where the quote from my title is from.  

I got a nice 20 minutes of yoga in after lunch – and what followed was a special treat!

Froyo!

A new Fresh Berry opened up right down the road from us and they sent us a coupon in the mail for a free 8 oz. yogurt cup!

Obviously I told Chad we had to go to redeem the coupon 

Being the wonderful boyfriend that he is, he left work right at 5pm so we could go and make it back in time before class.

I was expecting it to be a madhouse but it actually  wasn’t so bad all things considered!

We have a coupon for a free one of these guys on Thursday and seeing these made me super excited for it!

But today was all about the froyo.

I went with original tart + peanuts, chocolate chips and strawberries –

A perfect pre-class snack!

When I got home it was time to throw together dinner before class!

Thanks to my meal planning at the end of last week, I knew just what we were having.

If you guessed chicken parmigiana, you’d be right!

This was one of our staple meals growing up.  It was my dad’s speciality.  So tonight, I took my first shot at making it myself!

I preheated the oven to 450 then lined up my flour, eggs and breadcrumb mixture (just 1/4 cup of breadcrumbs + oregano + grated parmesan) –

Then just dipped one boneless skinless chicken breast in each bowl before placing it into a well-greased oven-safe dish.

Into the oven it went for 20 minutes (flipping once to evenly brown each breast) – and then I pulled it out, topped each piece with marinara sauce and mozzarella cheese, then popped it back in for another 5 minutes + 3 minutes on broil to get a nice crisp on the cheese.

It came out wonderfully!  And I can’t believe how simple it was – this is definitely going to become a regular dish.

All that was left to do after that was plate the dish!

I put each breast over whole wheat farfalle and served it with a slice of crusty whole wheat bread on the side.

      Ahahaha – I love that. We watched it once this weekend and I have a feeling there will definitely be at least a couple more viewings before the week is over. SUCH a good movie.

    I love chicken parm. I usually pound it out thin and cook it on a wire rack so it stays crispy. But this looks even better!! I will give it a whirl…I mean Dad’s always know best, right?

      Haha actually, funny you should say that because as I was browsing other recipes before making this I realized that they all pound it thin! My dad never did that so I stuck with the way I grew up with this time but I think I might try pounding it next time…I bet it’s delicious! Let me know how you like this way if you try it – it’s one of my favorites 🙂

    Did you know that after I saw your froyo picture I dragged Adrienne out of the house and went to go get some myself? We sat in the blazing hot sun and got all sticky and covered in froyo. Actually, she was the only one who was covered in it.

    It was fresh. I love you and Bridesmaids.
