Tucked In

After lunch I digested a bit and then headed to the gym.

I was long overdue for a good workout.  It felt so nice to sweat!

I did 30 minutes on the elliptical followed by my back strengthening exercises and then I was back home to find Clara who had tucked herself into bed:

The stupid picture is blurry but I had to share it anyway – it was just too good.  I have no idea how she managed it, but the fact that she did makes me think she’s MUCH smarter than I give her credit for!

I snacked on an apple and peanut butter after my shower and when Chad came home, he headed out for a run so I took Clara on a short walk.

It took some convincing…

…but ultimately I got her up and out!

When we all got back home we were all ready to eat!  Clara took to her bowl and Chad and I made a dinner of roasted broccoli, sweet potato rounds and chicken sausage.

Delicious.

The sweet potato rounds were prepared with olive oil and salt and roasted for about 40 minutes at 450 degrees.

As was the broccoli (all on one pan):

About 30 minutes in, I tossed the chicken sausage directly onto the rack in the oven until they got slightly crisp.

Topped with ketchup and mustard and served on a whole wheat bun.

A nice ending to the day.

I think all 3 of us are pretty exhausted so it will be early to bed for the whole household!  Night everyone.

    Oh my goodness, Sammy does the exact same thing! I think he thinks he is secretly a human trapped in a dog’s body. 🙂

    dinner looks good and simple. 🙂 I’m going to have to try veggie sausage. I’m jonesing for those whole wheat buns.

    I loved taking EP’s dog for a walk. she made it so entertaining!

      I’d recommend Trader Joe’s Sausageless Sausages for a good veggie one. SO good!

    Haha that is too funny with clara! My poodle occasionally does the same thing and it gets me every time.

    I have fallen in love with Chicken Sausages! Trader Joes and Al Fresco both make amazing flavors and I really like them on the grill, but they are definitely versatile. Your dinner reminds me of summer and I love it!
