Baking is a huge part of what makes the holidays the holidays in my family.  Every year we have a spread of cookies that, if we weren’t sharing with all our relatives, would last us until Easter.

And I think a huge misconception a lot of people have about me is that because I’m interested in nutrition, holiday cookies are not a part of my routine.

But that’s just totally wrong.

I’m a huge proponent that there is a place for every single food in the diet.  If you like it, you can find a way to incorporate it.

These cookies incorporate a white whole wheat flour that adds a little fiber without sacrificing flavor.

Description

gooey chocolate cookies get a mint twist with a peppermint kiss pushed into the center.


Ingredients

Scale
  • 1 1/2 cups white whole wheat flour (all-purpose works as well)
  • 6 tablespoons unsweetened cocoa
  • 3/8 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 tablespoons canola oil
  • 2 large eggs
  • 1/4 teaspoon vanilla extract
  • 1/2 cup semisweet or dark chocolate chips
  • Peppermint Hershey’s kisses

Instructions

  1. Preheat oven to 350 degrees F
  2. Combine flour, cocoa, and salt in a medium mixing bowl.
  3. Place sugar, butter, and oil in a separate bowl and beat with a mixer at medium speed until well combined (about 5 minutes). Add eggs, 1 at a time, beating well after each addition. Add vanilla; beat 1 minute. Add flour mixture to butter mixture, beating at low speed just until combined. Add chocolate; beat at low speed just until combined. Cover with plastic wrap; chill 30 minutes.
  4. Drop dough by 1 – 1.5 tablespoonfuls 2 inches apart onto baking sheets lined with parchment paper. Bake for 8 minutes or until almost set.
  5. Allow to cool on pan 2 minutes or until firm. Place peppermint Hershey’s kisses in the center of each cookie.
  6. Remove cookies from pan; cool on wire racks.
  7. note: for a smoother cookie, roll into small balls before placing on the pan
