Iiiiiiit’s asparagus season!!
And boy does it make me happy.
You can grill it, roast it, steam it…even fry it I suppose if that’s what you fancy.
I’ve never been super creative with asparagus because I love it so much plain.
I usually just roast it with some olive oil and salt and call it a day.
But as I was pulling it out of the fridge this time to do the usual, I saw some feta in the corner and suddenly the idea of asparagus without feta felt inconceivable.
To make it even better, I toasted up some walnuts to crumble on top and OH MAN.
It was a good call.
{roasted asparagus with toasted walnuts and feta}
ingredients:
- 1 bunch of fresh asparagus
- 1/3 cup feta cheese, crumbled
- 2-3 tbsp. walnuts, roughly chopped and toasted
- 2 tbsp. olive or canola oil
- salt, to taste
- 1/2 a lemon (optional)
directions:
- preheat the oven to 425 degrees F
- line a cookie sheet with tin foil and drizzle 1 tbsp. oil over it
- wash asparagus and chop off fibrous ends
- place on the prepared cookie sheet in one layer
- drizzle the remaining oil over the asparagus and sprinkle with salt to taste
- bake at 425 for 20 minutes, rotating halfway through
- remove from oven and sprinkle with toasted walnuts and crumbled feta
