I’m glad you guys were as excited about the new Larabar flavors as I was! I seriously can’t wait for these guys to come out so that everyone can enjoy them!
Breakfast this morning was quick and easy but filling and delicious. Doesn’t get better than that!
I finished up my Kashi Go Lean Honey Almond Flax box and add in a little Kashi Heart to Heart for a little more heft -


+ a little vanilla soymilk -
As always, it was a crunchin’ munchin’ good time
On the side I added two plums and a little coffee + foamed soymilk supported by my adorable niece, Julia

This breakfast did the trick and I’m fueled and ready for what I know will be yet another long day. At least being busy means good things for Health, right??

There are just few things in life that can make everything better than a weekend at home.
I’m seriously so in love with my house – it’s actually the house that we moved into the very day that I was born. I’ve never lived anywhere else so I have SUCH a fond place in my heart for it 
Maybe I’ll give you a picture tour tomorrow if there’s time you lucky ducks
Okay enough gushing!
I continued my cleaning rampage well into the late afternoon and came up for air when I found myself feeling a little hungry.
It was a tad too early for dinner so I just settled on a Kashi Go Lean to-go bowl

that I added a little Craisins + soymilk to -

Worked like a charm and held me over perfectly until dinner.
My mom was off to meet my grandmother at yet another Greek Festival (we Greeks are crazy, summertime = festivals up the wazoo!). I was feeling a little tired and didn’t feel up to it so I decided to hang back and wait for the arrival of Shannon and Patrick.
My mom and I chatted as she got ready and I whipped up some dinner. I FINALLY got to have the big salad I’ve been craving for days! (Okay – let’s be honest, I crave a big salad everyday…but forgoing one in favor of a moldy yogurt the other day made my normal craving increase times 10!)

I piled it high with romaine, radicchio, baby carrots, celery, cucumbers and of course the yummus hummus -


Look at that baby in all it’s greeny, healthy, DELICIOUS glory! It was as good as it looks!
It was accompanied by some of my mom’s beautiful flowers -

And some toasted whole wheat bread + smart balance 


Despite this being a totally satisfying meal – I just couldn’t resist throwing together this lovely bowl -

No. You haven’t died. But you HAVE gone to ice cream heaven 
Hood’s Light Martha’s Vineyard’s Black Raspeberry with some walnuts + 60% dark chocolate chips on top -


Seriously – does life get any better??
I’m off to kick back and relax with a little baseball and then maybe a movie or perhaps some yoga to follow.
It feels so good to be back in the land of happy people!

Morning Everyone and Happy Thursday!
I’m definitely a tired girl this morning and decided to forgo my usual homemade coffee for a stronger and larger Starbucks version – hope it does the trick! 
It’s another gloomy day around here but they’re saying it’s supposed to start looking up tomorrow so fingers crossed
I don’t get it with the weather lately, I’ve never experienced such a rainy northeast summer in my 24 years on earth!
To put a little bright color into my day I decided on a big bowl of mixed cereal for breakfast -

Mmm Mmm good 

I added in about 1/3rd a cup of Kashi Go Lean Crunch Honey Almond Flax, 1/3 cup Kashi Heart to Heart and a little less than 1/4 cup of Cait’s Plate MojaMix
Then I sprinkled it with a few Craisins and splashed some light soymilk over it all -

Snug as a bug in a rug in my Boston Prudential Center Soupfest cup 
I gobbled it all up with an almond butter spoon and a wrinkly plum on the side.


I’m off to get my hands on that great big coffee! See you all for lunch!

Dinner suffered the consequences of our late (and rather large) lunch this afternoon. I started to feel slightly hungry around 7 and decided I’d just whip up a breakfast dinner of champions – a small bowl of MixMyOwnCereal 
Same mix as before: 1/2 cup Kashi Go Lean Crunch Honey Almond Flax, 1/2 cup Kashi Heart to Heart, and ~2 tbsps of Craisins…


all doused in light soymilk -

Finished off with a crisp gala apple:

T’was a crunchin’ munchin’ good time 
Before I broke for dinner I was a busy baker bee -
I made Chocolate Chip Banana Oatmeal Cookies based off a recipe from Health (my modifications will be posted on “On Cait’s Plate“) and they came out great!
I was worried I had burnt them at first, but upon further inspection I just realized I had mistaken the HUGE chunks of delicious dark chocolate floating around in them for burnt edges! Phew! 


I was such a good girl while baking them too! I didn’t eat ANY of the batter (I think this might have been a first for me!) – not even any spoon-licking! Because of that, I figured I deserved TWO to taste-test 
Time to go get my yoga then my sleep on.

Happy Friday Guys!
This week completely flew - I can hardly believe it’s Friday already…but I’ll take it!
I started the day off with a great big Green Monster that I topped with a little Kashi Heart to Heart:

And paired with a perfect peach (say that five times fast!):

This was actually a white peach which are my FA-AVORITE! White peaches and white flesh nectarines earn high marks in my book – by far a superior taste to the regular yellow in my opinion.
The Green Monster wasn’t my favorite that I’ve ever made, but it was okay. I took my leftover soyberry mctwist smoothie from yesterday (which was just strawberries, banana and soymilk) and added a Berry Flavor Amazing Grass with a scoop of wheatgrass. I think I just prefer the regular flavor amazing grass…oh well!
The Kashi Heart to Heart on top was delicious! I was so glad I added that in.

Mmmm – Kashi goodness.
I got too full for the peach so I’ll bring that to snack on when that inevitable mid-morning hunger strikes

Time to whip up a quick iced coffee, do a little blog reading then head into work – see you all for lunch!

Afternoon Cait’s Platers
I hope your mornings went well and you’re coasting through this Thursday afternoon right on into Friday!
I’m off to get my root canal soon (
), so my afternoon could be better, but hey – at least that hopefully means no more pain! How’s that for a glass-half-full attitude?!
For lunch today I decided to go with what I knew worked seeing as it may just be my last chewable meal for a while…
I did a variation on the same salad that I threw together last night -


I kept the mixed greens, strawberries, hard-boiled egg and almond slivers the same, but substituted the veggie burger with the last two slabs of my plain and bbq baked tofu as my protein source.
On the side I added some Kashi love…

And a frozen Mixed Berry Whole Soy&Co yogurt with some Go Lean Crunch Honey Almond Flax mix-in:

Yum.

I’m off to face my fate! If dinner is nothing but a smoothie, I apologize!

Goooooood Morning!
I was glad to see that everyone seems to think I made the right choice with the MacBook. I have to say – I’m definitely not feeling any regret myself! I adore Mac products and I am happy to say that this purchase only further confirms that adoration. If you haven’t gone Mac, I strongly encourage you to – but be forewarned, once you do, you won’t go Bac’ 
I was having a lazy morning today so I decided to forgo exercise and just jump right into breakfast. Hopefully I’ll be able to get something in later, though it’s looking like it’s going to be a lousy day out there – so who knows.
For breakfast I jazzed up a boring bowl of regular cereal by mixing both Kashi Heart to Heart and Kashi Go Lean Honey Almond Flax then adding in some Craisins and honey roasted almond slivers – such a rebel, I know. 

On the side I added a crispy gala apple -

Halfway through eating this, I jumped up and added a little Justin’s Natural Almond Butter because, let’s be honest, isn’t everything is just that much better with a little almond butter? 

T’was quite delicious if I do say so myself. I’m going to add an iced coffee to it as well, but I’ll spare you the picture since it’s the same everyday and you’re probably way sick of my little addiction
Oh! And last night, if you can believe it, I still felt hungry even after my chocolatey-strawberry-yogurty delight so I went back for another silken strawberry cupcake and added a little slurp of light soymilk.

Seemed to do the trick but YIKES – don’t know what was goin’ on with me! 
Alright, time to get this day started.

It’s been a busy morning and I was quite happy to break for lunch – which I have to admit, I’ve been excited to eat since breakfast!
I packed a bunch of delicious things today..

The star of the show was most defintiely my baked tofu sandwich that I covered in a slice of pepperjack cheese then toasted to perfection:

Topped with a little romaine and a smear of Annie’s Natural mustard, it went wonderfully with my leftover spinach…

Love those honey roasted almond slivers…they make the dish every time!
To round it all out, I had circular tower consisting of a vanilla chobani topped with some Kashi Go Lean Honey Almond Flax (my favorite) -

The excitement to eat this lunch was NOT unwarranted! It was absolutely fantastic!
I based my baked tofu recipe off Gliding Calm’s. I started with a block of Nasoya extra firm tofu that I cut up into 3rds, then again into halves. You can vary this however you want depending on how thick/thin you like your tofu…obviously the thinner you go, the more crunchy it will be. I then added a little olive oil and salt – baked at 425* for 45 minutes. SO good. If you’re not a tofu fan, definitely try it this way, I promise you won’t regret it.

Morning!
I’m in SUCH a cheery mood today because when I woke up, instead of seeing cloudy overcast skies as predicted – it was bright and sunny! I literally jumped out of bed and immediately opened all my windows to let the fresh air and sunshine envelop my apartment
There’s just nothing better…
With all the happy natural light surrounding me, I was instantly in the mood for some yoga and promptly started in on what ended up being a great 40-minute session. Yoga is especially wonderful when I don’t have to rush – it’s during those sessions when I really feel the mental and emotional lift as well as the physical.
After showering and dressing I needed some FOOD. I poked around my pantry and decided the one major thing that was calling out to me was cereal, so that’s exactly what I had – with some juicy grapey grapes on the side.

With the help of my buddy Bruce
(The story behind Bruce is that I really want a dog but my apartment is not pet friendly and frankly, I just can’t afford one right now. So Mike bought me this cute little guy to help off-set being bummed about that. Similar to Kath’s bears, he gets into all kinds of crazy shenanigans that I’ll be sure to share with you from time to time)

Despite my poor review of the Kashi-Cinna Raisin Crunch as a cold cereal earlier in the week – it was much better today! I added the milk at the very last second and also put in a bit less – it seemed to do the trick, this morning’s bowl was great! 

We’re off to Coney Island for the day so lunch and dinner won’t probably be up until later tonight. Enjoy your Saturdays however you choose to spend it!

This afternoon I snacked on a little more Kashi Cinna-Raisin Crunch cereal with the rest of my Iced Oatmeal Raisin Luna bar from this morning and an apple. I munched on all of this all throughout the afternoon…


I’ll warn you right now – today was NOT a good day. I left work feeling SO discouraged and it only got worse as the night went on. 
Mike and I headed down to Best Buy to try to look at computers and it was just a complete waste of time. Why the heck do these things cost so much money?! I have no idea what I’m going to do about it, but hopefully I can figure it out soon because not having a computer is really not an option…
On top of that the tooth that I have an upcoming root canal on has been absolutely killing me lately. Each day it gets more and more painful and the appointment to get it fixed is still two weeks out!
My lease is also up soon so I need to figure out what I’m going to do about that – do you guys ever feel like life is just one big expensive thing??
Luckily, I found a cure for my Debbie-Downer attitude – BAKING!
Baking always just makes me so happy – I really should follow in Angela’s footsteps and open up a bakery of my own. I would be oozing endorphins 24/7! Haha – the grass is always greener I guess, right?
Before I set out on my baking expedition I made sure to eat some dinner. 
Tonight we made sauteed shrimp. It came out really good. Mike had his with some whole wheat couscous, spinach and an Heineken (which he insisted I get in the picture):

I put mine over some mixed greens that were on their last day and added some golden raisins and juicy grapes for some extra chew
Once topped with the shrimp I drizzled a little balsamic vinaigrette over the top and dug in.



On the side we toasted up some Ezekiel buns and broiled them in the oven with some EVOO and salt.

An easy and satisfying meal – which is just what I needed tonight.
After that I set out on my baking mission and sucessfully baked away the blues!
I made two recipes that I had seen and drooled over on Tina’s blog:
Silken Vanilla Cake (except I used Strawberry) and Protein Muffins. HOOOOLY YUM guys. I would definitely suggest you try these ASAP. They were both REALLY good (cause of course I had to try…you know, to make sure they were safe to eat
).
