Quick and easy dinner tonight shoved down my face after a 20 minute yoga session and before my GRE class!
A big bowl of salad.
Into the bowl went:
- Mixed greens
- Avocado
- Baby carrots
- Baked Tofu
Annie’s Balsamic Vinaigrette on the side:
Whole wheat pita bread for dipping:
So good.
Exhausted so into bed I go!

By the way have you ever tried vegan overnight oats? I’d love to see you do a post if you try them. I’m interested in trying it myself as greek yogurt just isn’t sitting well with me 🙁 Sad because I love greek yogurt and I’m not a fan of soy or coconut yogurts otherwise I’d substitute.

I have! You can find them here: http://caitsplate.com/?s=vegan+overnight+oats But I’ve mostly relied on soy and coconut yogurts so it might not help too much 🙁 I would suggest just experimenting with swapping out different yogurts you find appealing until you get one you like! Good luck!
