I’ve been dying all summer to make this salad. Peaches have just been incredible this season – so perfectly juicy and sweet.
I absolutely love grilling fruit in the summer and I’m ashamed to say that this salad is the first time that I actually go around to doing it. But boy was it a good time to start.
I originally contemplated just throwing some fresh peaches over the top of this salad without bothering to grill them…
And let’s be honest, that would’ve been delicious in its own right, but grilling these guys was worth the little bit of extra effort. They got an almost tart taste to them upon grilling and made the whole salad feel full of so much more flavor.
Speaking of flavor, if you’ve never tried the arugula-avocado-walnut-feta-peach combination you absolutely have to. They work perfectly together.
Another reason to love this salad? It provides fiber, protein, healthy fats, vitamins and minerals all in one easy to pull together dish!
Ingredients
- 2 large handfuls of arugula
- 1 medium peach, sliced and grilled
- 3 tablespoons crumbled feta cheese
- 1/4 medium ripe avocado, sliced
- 2 tablespoons crumbled walnuts
Instructions
- Layer arugula on the bottom of the bowl or plate
- Top with sliced avocado
- Layer grilled peach on top
- Sprinkle with feta and walnuts
- Optional: top with olive oil & balsamic vinegar or dressing of choice, serve with a slice of whole grain bread
