this easy chicken souvlaki salad comes together in just minutes and is full of mediterranean flavor!
There was a Greek diner in our town growing up that we frequented all the time and my absolute favorite dish there was the chicken souvlaki salad.
I find myself wishing to be back in my hometown every now and then just so that I can go to the diner and get my favorite dish. But since that’s not possible, I decided it was time to take matters into my own hands!
And it turns out, I should’ve been doing that all along because it was so ridiculously easy!
Although full disclosure, I took a few shortcuts. I didn’t utilize the traditional souvlaki chicken (which is marinated chicken skewered and grilled, typically with vegetables) but instead just cubed up some chicken breast I had on hand. I also utilized store-bought tzatziki sauce to save even more time (though this recipe for homemade that would be just as good!)
Despite the shortcuts, there’s not an ounce of flavor missing from this dish. It’s got everything you could hope for in any Greek salad and then some.
Not to mention you’re getting whole grains, protein, heart-healthy fat and fiber in every forkful. It can’t get any better than that you ask me!
I made a little video below showing you just how easy it is to pull this dish together (in case there was any doubt!).
