Today is a very exciting day you guys!  I’ve had the pleasure of working with the team over at Swell Foods to help introduce you guys to Swell, The Next Wave of Ice Cream.  And let me tell you, it is GOOD!  You know how some better-for-you ice creams taste super artificial?  Swell Ice Cream honestly tastes like the real deal (ask the 6 empty pints currently sitting in my recycling ).

And speaking of flavors – it comes in SO many delicious ones that sound (and taste!) so ridiculously indulgent it’s hard to believe they all boast 10g of protein, 120-calories and less than 2.5g of fat per 1⁄2 cup serving. My two favorites are Chocolate Chip Cookie Batter and Peanut Butter Chocolate Chip while my husband says Cookies ‘N Cream and Dark Chocolate Toffee top his list (we’ve been to our local Publix quite a few times in the past week to re-stock!).  Check out all their fabulous flavors and use their store locator to find where you can pick up your favorites!

So now that you know all about it, let’s talk about how to use it (aside from eating it straight out of the pint…which I definitely do!).  Here are a few of the ways we’ve been loving it in our household:

In Smoothies

My husband has been addicted to these strawberry banana coconut smoothies that I’ve been making using the Coconut Swell Ice Cream flavor.  They really do taste like they’re straight from the islands!  It’s such a refreshing breakfast or snack option packed with fruit and protein!

Strawberry Banana Coconut Smoothie (serves 1)

  • 1 frozen banana
  • ½ cup frozen strawberries
  • ½ cup Coconut Swell Ice Cream
  • Plain, unsweetened almond milk

Put banana, strawberries and ice cream in the blender and blend!  Stream in almond milk until you’ve reached your desired consistency (between ½ cup and 1 cup usually does it!).

You can also add in flaxseeds, nut butters, chia seeds or use a little less milk and serve it as a smoothie bowl!

 

In a Breakfast Bowl

Another one of my husband’s favorites – straight up for breakfast!  You can also use any flavor you like since they all boast the same nutrition!  Serve ½ cup of your favorite Swell Ice Cream flavor with your favorite toppings.  We love mixed berries, granola and nut butter giving you a good dose of fruit, protein, whole grains and heart-healthy fat!

 

In Frozen Chocolate Avocado Mousse

The creaminess of the avocado and Dutch Dark Chocolate Swell Ice Cream make this such a dreamy snack.  It’s perfect to serve mid-afternoon with strawberries (or my favorite, topped with walnuts!) or after dinner to squash your sweet tooth.  You’re getting protein and plenty of heart-healthy fat all in one dish!

 Frozen Chocolate Avocado Mousse (serves 2)

  • 1 container Dutch Dark Chocolate Swell Ice Cream
  • 1 large (or two small) ripe avocados, peeled and pitted
  • Optional toppings: fresh strawberries, walnuts

Combine ice cream and avocado in a blender and blend until smooth.  Scoop out and top with toppings of choice.

 

With Waffles

This is another option that’s great with so many different flavors.  We’ve done coconut and tropical fruits, vanilla with mixed berries and even chocolate with crumbled peanuts.  Every single one has been delicious!  With each bite you’re getting fruit, protein and whole grains.

And last but of course not least..

In a Cone

Because what screams summer more than a good old-fashioned ice cream cone!?  Especially one that’s good enough to eat for breakfast 🙂
