I took a nice long walk this afternoon and then came home and made the world’s easiest monkey bread (for one):

Chad had a tube of Grand’s biscuits in his fridge that I had my heart set on using for something other than biscuits.

I contemplated doughnuts but didn’t want to deal with the frying…so monkey bread it was!

World’s Easiest Monkey Bread for One

Ingredients:

  • One 10.5 oz. container of Grand’s biscuits
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1-2 tsp. cinnamon
  • 1/2 cup butter (melted)
  • 1 cup confectioner’s sugar
  • Splash of milk

Directions:

  1. Grease a small oven-safe dish or mini bundt cake pan
  2. Combine sugar, brown sugar and cinnamon together in a bowl and set aside
  3. Melt butter in a bowl and set aside
  4. Pull apart biscuit dough piece by piece, rolling each piece into a little ball (try to make each ball approximately the same size)
  5. Roll each dough ball in the butter, then in the cinnamon sugar mixture
  6. Layer each ball into the prepared pan
  7. Baked on 350 degrees for 28-30 minutes or until nicely browned
  8. Allow finished monkey bread to cool then combine confectioner’s sugar and milk and top monkey bread with it

Before I knew it, it was time for dinner!

We kept things simple tonight beginning with some roasted potatoes (inspired by our trip to The Granary at Fearrington!):

We bought a bunch of tri-colored potatoes at Trader Joe’s the other night and simply sliced them up and tossed them in olive oil, salt and pepper.

Roasted in the oven at 425 for about 45 minutes…

To go with it we cooked up some chicken sausages which we had on whole wheat buns with ketchup and mustard:

      The potatoes actually came out really well! I couldn’t stop popping them in my mouth throughout the cooking process! And I was really happy with the chicken sausage too – it was the chicken andouille version. SO good!

    MMMM those roasted potatoes look amazing as does the Monkey Bread. Why have I never thought of using bisquits for Monkey bread.

      I know – the one other time I made monkey bread I made it from scratch but this was actually a much easier way to do it! Though I’d argue the from scratch version is much better 🙂

    Yum! Looks good! I’ve never had monkey bread, I think I’m missing out lol.

    Cait, Would you mind sharing how you and Chad met? I love hearing/reading stories about how couples meet. Its so sweet and heart warming 🙂 (If you dont feel comfortable sharing, I completely understand)

      You should definitely try it out!

      And of course! Chad and I have actually known each other since 2006 – he was at his first job out of grad school at Boston College where I was a senior. He worked in the sports marketing department and I was part of the student team and we became good friends through that. After I graduated we lost touch for a little bit and then ended up reconnecting last summer through email. We emailed back and forth through most of the summer and the fall just catching up on each other’s lives and then things kind of went from there! He pretty much went from being my best friend to my boyfriend 🙂

    I have always wanted to make Monkey Bread. Honestly, I don’t think I’ve ever even had it before but it always looks so delicious and sounds super easy to make.

    My dad made legit monkey bread this weekend – so good, especially fresh out of the oven – but with the two rises it takes FOREVER.
