I got some pool time in!

And boy did it feelย good.

Reading materials for lounging were an old Whole Living:

And Pottery Barn

Boy do I wish I could just live inside a Pottery Barn magazine…

When I came in I was craving water and fruit and more water!

The perfect cure!

3 slices later and I was satisfiedย

When my sister got home we hung around a bit, she did a workout and then we started in on dinner:

Please excuse the pool and sun hair!

While I tended to the asparagus my sister got to work on the turkey burgers.

They came out FABULOUS!!

I loaded mine up with some cheese, mustard, avocado and lettuce and put it between two slices of honey wheat bread.

We also added some Alexia sweet potato waffle cut fries to go along with it…

Perfectly crisp.

The roasted asparagus came out perfect – just salt, lemon pepper and olive oil baked at 425* for about 20 minutes.

Greek Turkey Burgers {serves 4}

Ingredients:

  • 1 pound of extra lean ground turkey
  • 1/4 cup of bread crumbs
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • Oregano to taste (we used Greek seasoning from Penzey’s Spices)
  • 1 tablespoon of extra virgin olive oil

Directions:

Mix thoroughly by hand in a large bowl and divide into 4 equal balls. Gently flatten balls in the palms of your hands until about 1 inch thick. Grill until cooked through, about 10 minutes.

And for dessert:

Raspberry Lemonade!

So good.

We’re going to try to get a walk in with Clara after we finish the Mad Men episode we’re watching.

Can’t wait for Bethenny Ever After tonight!!

Haha – shoot! Sorry ๐Ÿ™ Do you have a pool in your complex or did I make that up? I feel like I remember that from last summer but maybe you were visiting somewhere…

those look super tasty! if you’re feeling crazy, you can add little pineapple bits + teriyaki sauce to the mix for a more tropical feel. sounds weird but it’s good!
