The focus this week is definitely on easy, portable snacks.  If the peanut butter and jelly whole grain waffle sandwiches are not your style, then I’ve got you covered.

This is honestly the simplest, but tastiest snack and I find it satisfies all my afternoon or evening cravings: a little bit of sweetness from the chocolate chips, a little protein from the peanuts and whole grains from the popcorn.

It’s hard to think of something better.

This version of the snack takes all of 2 minutes to pull together.  If you wanted to get really creative, you could melt the chocolate and drizzle it over the peanut/popcorn mixture.  Either way, it’s a quick and easy snack that’s perfect for those afternoon or late evening cravings!

CHOCOLATE PEANUT POPCORN

Ingredients

  • 1/3 cup of high quality popcorn kernels* (see note)
  • 3 tablespoons canola oil (or other oil with a high smoke)
  • 1/3 cup dark or semisweet chocolate chips
  • 1/3 cup roasted, unsalted peanuts
  • Salt, to taste

Instructions

  1. Put oil into a large pot and place on the stove top over medium heat
  2. To test the heat of the oil, put a few kernels into the pot with oil and cover it.
  3. Wait until you hear the pop of the kernels, lift the top and add the remaining 1/3 cup of kernels
  4. Place the lid back on the pot and remove from the heat for about 30 seconds
  5. Crack the lid slightly on the pot and bring back to the heat, shaking gently once popcorn really begins to pop to ensure even popping.
  6. When popping slows, remove from heat and allow to sit for a few minutes.
  7. Dump popcorn into a large bowl, allow to cool then add peanuts, chocolate chips and salt as preferred.

Notes

*If you prefer, you can just use pre-popped bagged or microwaveable popcorn as well!
